Brooks has some traditional sharps styled blocks, as does Old West, altho Bernie isn't doing nose pour adjustable anymore.
As to the bullet weight, if you look at the Sharps and other catalogs from the period, with few exceptions they did not load a bullet in the 45 cases heavier than 500 grs until the powder charge started exceeding 110 grs.
